MEL'S NOTES
I am slightly obsessed with pistachios. I sometimes wonder why they’re green and why are they great in gelato and sometimes I wonder why they’re so expensive. And yes I looked it up! Pistachio requires a lot of manual, hands-on labour that machines cannot handle. Each pistachio nut is hand-sorted to eliminate twigs, bugs and leaves. Apart from all that, the farmers really put in a lot of effort to ensure optimum growing conditions and as mentioned above, harvesting pistachios requires plenty of human efforts. I have a very high respect for farmers and the work and toil that they do to bring good foods to our tables. As chefs, it is our responsibility to make good dishes out of a farmer's harvest always! So THANK YOU farmers! And the results always speak for themselves, burnt pockets notwithstanding.
