Crunchy, crushed pecans, we love how toffee-like pecans get when they get roasted. These babies are so light and so easy to continuously pop into the mouth. Absolutely one of our favourite cookies and we are definitely adding it into our Cookie Hall of Fame! We really love pecans! These cookies are made with an insane amount of these wonderful nuts, which, when baked, give off the most delicious toffee-like aroma! I don't know why they're called Mexican Wedding Cookies because I had asked a Mexican friend of mine (¡Hola Olmo!), and he confirmed that there is no such thing in Mexico! Oh well, I guess this is kinda like the curry-scented Singapore Noodles found in Hong Kong. The Mexican wedding Cookies are vegetarian and eggless.
