A wholesome and warming pumpkin and lentil curry.
MEL'S NOTES
Growing up, I was not exposed to lentils. It was only after dating and then marrying a Punjabi guy in 2004 that I was introduced to dal. A wide variety of dal, in fact and I fell in love! Pink dal, yellow dal, masoor dal, split pea dal, there were sooo many varieties. To make a long story short, rice and dal (or dal chawal in Punjabi) became a comfort food for me. This dish though is something a little bit more than just dal. Friends and customers who are vegan get to choose tofu cubes over paneer. The dal itself is mildly spiced and features green and pink lentils, cooked down till just nice. The great thing is the gentle sweetness from pumpkins, which I've added to balance off this whole tray. Perfect for scooping ladlefuls over our Basmati Rice and perhaps a dollop of yogurt on the side and a pickle of your choice for that mighty kick!
