MEL'S NOTES
Lamb Madras is an Anglo-Indian dish, named after the South Indian city of Madras during the British Raj era. The city is what is now known as Chennai. Much like Vindaloo Curry and Mulligatawny Soup, you will only find these curries, outside of India. Our New Zealand lamb shoulder is slowly cooked for several hours in a spicy and smokey mix of south Indian spices (think black pepper, fennel, coriander, turmeric, cloves, fenugreek and chillies), onions and lots of ripe tomatoes. This curry is deeply satisfying, with its rich, bold and piquant flavours. Our chefs give the lamb pieces a good massage with all the spices and leave it to cook over gentle heat until completely fork tender. An absolute banger with rice or to scoop up with flatbread.
